Adobo Fried Rice

Adobo Fried Rise I don’t know why I never thought of doing this before. I’ve been seeing adobo fried rice on a few of the Pinoy food blogs I frequent and I swore I would do it next time I have some left over adobo. So when I had a small amount of left over pork adobo just sitting in the refrigerator, I knew it was time.

There’s really no recipe for this dish, it’s just a matter of using what you have and putting it together to create a brand new dish. Just my kind of food, no exact recipe, easy, frugal and most of all delicious.

To recycle my left over pork adobo which came up to about a cup of meat with some sauce, I simply shredded it along with the garlic and onions that usually get left behind. I simply poured this concoction into a hot skillet and brought it to boil. When the sauce was boiling, I added cold, left over rice and stir fried them together. Fry the rice and adobo until the rice is has been heated through and has absorbed most of the adobo sauce. Add about a cup of frozen peas and stir fry for three more minutes until the peas have cooked through.

You can adjust the seasoning at this point, but the adobo sauce was enough to season this rice for us. We had this with some scrambled eggs and it was enough for a hearty breakfast!
